Ham & Cheese Muffins
Sift together dry ingredients: 2 cups flour, 1 Tablespoon baking powder, ½ t salt, ½ teaspoon dry mustard, 2 Tablespoons sugar.
Beat together with whisk or fork: 1 egg, 1/3 cup butter, melted, 1 cup milk.
Mix wet ingredients into dry, just until blended.
Fold in ¾ cup chopped (cooked) ham and ¾ cup shredded cheddar (I like sharp cheddar).
Fill paper-lined muffin tins. Bake at 400 degrees for 18-20 minutes.
